  5. Placez votre pâton au fond d'un saladier et filmez votre récipient. Laissez la pâte pousser durant 1h30. Puis stoppez la pousse même si votre pâte n'a pas doublé de volume.
  6. Prenez votre pâte, reformez une boule comme précédemment, filmez-la et placez-la au frais durant 30 à 45 min. (La pâte va continuer de gonfler)
  7. Sortez la pâte et NE LA DEGAZEZ PAS. Divisez-la en 8 pâtons de poids identique et formez 8 boules.
  8. Placez vos boules dans un moule à manquer ou un moule à tarte. Vous pouvez laisser un peu d'espace entre les boules, la pâte va travailler encore. (Inutile de beurrer le moule, cette pâte ne colle pas) Badigeonnez d'un œuf battu pour la dorure. Laissez la pâte gonfler durant 1h30.
  9. Une fois que les boules ont bien gonflé, enfournez à 180°c durant 30 min.
  10. Vous obtiendrez une brioche bien moelleuse ! @Bon ap !
