- 15 g farine
- 2 blanc d'oeuf
- 1 c. à. c. de cacao amer non sucré
- Le craquant
- 200 g pralinoise
- 85 g crêpe dentelle
- 45 g pralin
- La mousse chocolat noir
- 200 g chocolat noir pâtissier
- 4 oeufs
- 40 g crème liquide
- 1 pincée de sel
Instructions to make to make Le Trianon
- Tout d'abord disposer du papier sulfurisé au fond d'un cercle à pâtisserie.
- Préchauffez le four à 210° (th.7).
- Dans un saladier mélanger la farine et le cacao, ajoutez la poudre d'amande et 60 g de sucre et mélanger à nouveau.
- Séparer les blancs des jaunes d’œuf (ceci ne seront pas utilisés dans cette recette, réserver les pour une autre)
- Monter les blancs d'oeuf en neige jusqu'à ce qu'ils soient bien fermes et incorporer le sucre restant.
- Incorporer les blancs à la préparation précédente. Disposer cette pâte dans le cercle. Enfourner 10 à 15 minutes. Réserver.
- Chemiser votre cercle à l'aide d'une feuille rhodoïd
- Le craquant : Faire fondre la pralinoise au bain marie. Verser la dans un saladier avec les crêpes dentelle réduites en miettes et le pralin. Mélanger.
- Étaler le craquants sur le gâteau du fond à l'aide d'une spatule. Réserver au frigo afin de faire refroidir et durcir cette couche.
- La mousse: Séparer les blancs des jaunes d'oeufs.
- Faire fondre le chocolat avec la crème liquide au bain marie. Incorporer le chocolat aux jaunes d’œuf et mélanger.
- Monter les blancs en neige avec la pincée de sel.
- Incorporer ensuite un peu de blanc en neige dans la préparation oeuf/chocolat. Bien mélanger pour lier. Incorporer ensuite le reste des blanc délicatement.
- Verser la mousse sur le craquants. Mettre le gâteau au frais pour la nuit !
- Démouler délicatement le Trianon avant le le remettre au frais.
