I love Sabut Chilke wali Urad Dal, it is called KALO Maas ko DAL in Nepali language . I love the Pahadi Organic Kalo Maas ko Dal more, it's my must buy ingredients when I go to Darjeeling and Sikkim ( my native hometown).
Sometimes I love adding Spinach to it. You can have with roti and rice. To have with rice thin down the consistency of the Dal. I love tempering it with Garlic, the way my mom and grandma used to do.

Ingredients and spices that need to be Take to make Urad Dal Palak (Sabut Chilkewali Urad Dal/ Kalo Dal):
- 1 cup Whole Black Urad Dal washed & soaked Overnight
- 2 Bunches Spinach (cleaned and washed)
- 1 Tsp Mustard oil
- 1 onion chopped
- 1 tbsp Chopped Garlic
- 1 tbsp Chopped Ginger
- 2-3 Tomatoes finely chopped or coarsely grinded
- 1 generous pinch of Cummin seeds
- 1 Whole red dry Chilli
- 2-3 tbsp Veg oil
- 1 tbsp Desi Ghee
- 1/4 tsp Turmeric powder
- 1 tbsp Kashmiri LAL Mirch powder
- as per taste Salt
- For Tempering
- 2-3 tbsps Desi Ghee
- 1 tbsp Chopped Garlic
- 2-3 tbsp Roughly cut raw chillies
Steps to make to make Urad Dal Palak (Sabut Chilkewali Urad Dal/ Kalo Dal)
- Pressure cook the soaked black Urad Dal, Palak, Mustard oil and little salt for about 6-8 whistles or till the Dal gets cooked. If you have time, cook it slowly with all ingredients (in that case add the tomatoes when the Dal is almost done), it taste more better than pressure cooked.
- Heat oil and ghee in a kadai, add the Cummin seeds, whole dry Chilli into it, once it crackles add the garlic and ginger too and fry. No need to brown the ginger garlic, add the chopped onion and saute it, when it becomes translucent add the tomatoes roughly chopped, add Turmeric and chilli powder and salt as per taste and mix well and cook till the tomatoes gets cooked and the oil seperates. Add the cooked Dal Palak, if required add hot water to get the desired consistency.
- Cook and boil for another 5-10 minutes. After this heat ghee in a pan, once it becomes hot add the garlic and chillies, once it starts browning pour it on the Dal Palak and close it with a lid for about 5 minutes. Mix and serve hot with your favourite roti along with onion, chillies and lemon. Bon appetite!
