- En continuant de mélanger à feu moyen, votre sucre va fondre pour se transformer ensuite en caramel.
- Lorsque vos fruits secs sont bien enrobés d'un beau caramel brun (qu'il n'y a plus de sucre blanc), versez le tout sur une plaque recouverte de papier cuisson. Etalez afin de laisser bien refroidir ensuite. ATTENTION A NE PAS VOUS BRÛLER AVEC LE CARAMEL.
- Une fois que vos fruits secs caramélisés ont bien refroidi, coupez-les en petits morceaux et passez-les au mixeur ou blender. ATTENTION : Vous allez broyer du caramel, donc utilisez un blender ou mixeur avec un bol assez épais et solide ! Perso, j'utilise un blender avec un bol en verre épais.
- Votre préparation va se transformer en poudre. Puis les fruits secs vont libérer leur huile et vous obtiendrez une pâte. Poursuivez le mixage jusqu'à obtenir une pâte bien lisse et brillante.
- Votre praliné est prêt. Vous pouvez le conserver dans un bocal hermétique à température ambiante ou plusieurs mois au frais.
