- For paneer tikka
- 200 g Paneer (cut into cubes)
- 1 onion chopped into cubes
- 1 tomato chopped into cubes
- 1 capsicum chopped into cubes
- as per your taste Salt
- 1/2 tsp turmeric powder
- 3/4 tsp red chili powder
- 1/4 tsp garam masala
- 1/2 tbsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp ajwain
- 1/2 tsp chaat masala
- 1 tsp Kasuri methi
- 6 tsp curd
- 6 tsp roasted besan
- 2 tsp mustard oil
- 1/2 tsp ginger garlic paste
- 30 ml oil for roasting
- For gravy
- 1 onion
- 1 tomato
- 1/2 inch ginger
- 8-9 garlic cloves
- As per requirement cashew
- as required Khada masala
- 2 Fresh green chillies
- as per taste Salt
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tbsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp paneer tikka masala/ curry powder
- 1/4tsp garam masala
- 1/2 tsp sugar
- 50 ml fresh cream
- 1 small block of butter
- 30 ml oil
Steps to make to make Paneer tikka masala
- Start by preparing for paneer tikka. In a mixing bowl, mix all the ingredients as mentioned above.
- Next add the cubes of onion, tomato and capsicum.
- Mix all well and coat each of them nicely and let them rest for 15-20 minutes at least. Next in a skewer stick arrange the veggies and paneer.
- Put these on grill.
- As it's almost done, to give a smoky effect, place the tikkas on a wire and expose it to flame. But this is optional.
Instead you can place a small piece of coal in a small bowl, put some ghee on the hot coal. Place that bowl in the pan having tikkas. Cover immediately. Remove after sometime. You will get that smoky effect. So our tikkas are ready. You can relish it as such too with spicy green chutney. - But we will go one step ahead. We will make a creamy masala gravy for our tikkas. Take oil in a pan. Heat it. Add khada masala. Add onion, ginger, garlic, green chillies and saute.
- As it gets bit fried, add cashewnuts. Continue sauteing for some time more.
- Next add little water and let this sauteed stuff cool down.
- Take it for blending in a blending jar. Remove badi elaichi, star anise, and grind the rest into a smooth paste. Strain to make it velvety smooth.
- Next heat oil in the pan. Add the gravy masala. Add salt, sugar. Mix. Add a small block of butter. Mix all well. Let it get cooked in slow flame.
- Next add homemade fresh cream. Mix. Add Kasuri methi and mix.
- A creamy, thick and smooth gravy is ready...It's aroma, flavour is superb.
- Now is the turn to add the paneer tikka. You can keep the tikka on the gravy and serve else remove the tikkas from the skewer and mix with the gravy.
- Garnish with some fresh cream and crushed Kasuri methi. Serve with rice, roti, chapatti, paratha.
