- Pour les tuiles : Dans un saladier, mélangez la farine, le sucre glace et les amandes hachées. Ajouter le jus de citron, bien mélangez et finir avec le beurre fondu. Répartir l'appareil à tuiles en petits tas bien espacés sur une plaque garnie de papier sulfurisé. Enfournez à 200 °C pendant environ 5 min (attention : surveiller la cuisson car les tuiles colorent très vite). Laissez ensuite les tuiles refroidir, puis les décoller du papier.
- Fouettez la crème liquide avec 30 g de sucre glace dans un saladier très froid pour obtenir une chantilly. Réservez au frais.

- Répartir les fruits dans des ramequins de type Pyrex, ajoutez par dessus le Sabayon puis enfournez sous le gril du four pendant 5 min. Dégustez les Sabayons tièdes avec les Tuiles aux amandes.
